Oven Onion Potatoes

We love these as a side dish, and they are super simple. 



Ingredients:
  • 6-7 small red potatoes, or 4-5 medium red potatoes, cut up
  • 2 tbsp Vegetable Oil
  • 1 packet Lipton Onion Soup Mix (or generic brand)




Cut up the potatoes, but peeling the skin off isn't necessary.  Put the potatoes in a microwave-safe bowl with enough water to almost cover them.  Microwave on high for 5 minutes.  This gives the potatoes a jump-start cooking.


Once they're done in the microwave, drain the water and mix the potatoes with the soup mix and the vegetable oil in a baking dish.  Mix well, making sure that the potatoes are coated slightly in the oil.


Cook on 350 degrees for about 30-40 minutes or until the potatoes are soft.  Stir every 10 minutes.  After the potatoes are soft, remove from the oven and enjoy!
